Low Carb Zucchini Fries (Keto Friendly)
Craving something crunchy but still low carb? These zucchini fries are the perfect snack or appetizers to hit the spot. With just a handful of ingredients and minimal prep time, you’ll have a guilt‑free, keto‑friendly snack or side ready in minutes.

Ingredients
2 large zucchini
1 cup parmesan cheese, finely grated
1 teaspoon Italian seasoning
1 teaspoon garlic salt or sea salt
½ teaspoon fresh ground black pepper
2 eggs, beaten
Instructions
Preheat oven to 400 degrees.
Clean and cut zucchini in half and then in half lengthwise. Cut each piece into 4 sticks.
In a shallow dish, combine the almond flour, parmesan cheese, Italian seasoning, salt, and pepper.
In a separate shallow dish, beat the eggs with a dash of salt.
Dip the zucchini in the eggs, and then coat with the almond flour cheese mixture. Press down with your fingers to ensure enough breading sticks to the zucchini sticks.
Line a baking sheet with parchment paper.
Arrange the zucchini in a single layer, being careful not to overcrowd them.
Spray with oil.
Cook for about 20 to 25 minutes, until golden brown and desired crispness.
**Please note that I personally do not flip the zucchini halfway through cooking. I simply forget to do it, but you absolutely can flip for a more even color and crisp.
Air Fryer Baking
Preheat the air fryer to 400° F.
Spray the zucchini with oil spray.
Arrange the zucchini in a single layer and cook for 10 to 15 minutes, or until golden.
Remember to cook in small batches to not overcrowd the air fryer.
Serve as is with your favorite dipping sauce, or if you're like me, pair these fries with a protein-style burger for a guilt-free burger fix.
