Classic Banana Bread


There is something magical about fall and bananas browning on the kitchen counter, a promise of something sweet and warm baking in the oven. This banana bread takes me straight back to childhood with its gentle blend of banana, vanilla, and a touch of chocolate.


Lets get straight to it...

INGREDIENTS


  • 2 cups all purpose flour

  • 2 - 3 bananas, mashed (2 large or 3 smaller ones)

  • 2 eggs, at room temperature

  • 1/2 cup brown sugar

  • 1/2 cup sugar

  • 8 tbsp butter, melted and cooled

  • 1 tsp baking soda

  • 1 tsp baking powder

  • 1 tsp vanilla extract

  • 1/2 tsp salt

  • *Optional - 1/2 cup to 1 cup of chocolate chips or walnuts



INSTRUCTIONS


  1. Preheat oven to 325 degrees F.

  2. Slice the butter into smaller pieces and soften in the microwave for about 30 seconds. Let cool and set aside.

  3. In a large mixing bowl, combine the dry ingredients: flour, baking soda, baking powder, and salt.

  4. In a medium mixing bowl, mash the bananas.

  5. Add eggs, butter, sugar, and vanilla to the mashed bananas. Stir until fully mixed.

  6. Add the egg mixture to the dry ingredients and mix until just combined. If you want to add chocolate chips or nuts, do so now. I usually add just a handful of chocolate, though up to a cup is plenty.

  7. Line a loaf pan with parchment paper and grease the pan with a little but of butter or baking spray.

  8. Pour batter into the loaf pan and bake for 55 to 65 minutes, until center is done. Insert a toothpick into the center of the loaf; it should come out with minimal moist crumbs, not wet batter.

  9. Remove from the oven and cool before cutting.
