Banana Bread with Crumb Topping
If you love banana bread and a good coffee cake, you might appreciate this sweet delight.

I always have overripe bananas needing to be used, but this time I had leftover streusel topping from something my daughter baked. Naturally, I modified the original banana bread recipe by adding a basic cinnamon crumb topping, making my favorite redention: cinnamon crumb banana bread!
INGREDIENTS
2 large egg
1/2 cup sugar
1/2 cup brown sugar
1/2 cup unsalted butter (room temperature)
1 teaspoon vanilla
2 overripe bananas (you need 1 1/2 cup of mashed banana)
2 cups all purpose flour
1/2 teaspoon salt
1 teaspoon baking soda
1 teaspoon baking powder
Crumb Topping
1/4 cup Granulated Sugar
1/2 cup Brown Sugar (packed)
1 teaspoon Ground Cinnamon
1/2 cup All-Purpose Flour
4 tablespoons Unsalted Butter (melted or softened)
INSTRUCTIONS
Preheat oven to 325 degrees F.
Slice the butter into smaller pieces and soften in the microwave for about 30 seconds. Let cool and set aside.
In a large mixing bowl, combine the dry ingredients: flour, baking soda, baking powder, and salt.
In a medium mixing bowl, mash the bananas.
Add eggs, butter, sugar, and vanilla to the mashed bananas. Stir until fully mixed.
Add the egg mixture to the dry ingredients and mix until just combined. If you want to add chocolate chips or nuts, do so now. I usually add just a handful of chocolate, though up to a cup is plenty.
Line a loaf pan with parchment paper and grease the pan with a little but of butter or baking spray.
Pour batter into the loaf pan and sprinkle crumb topping (use as much as you like). Lightly press the topping into the batter and bake for 55 to 65 minutes, until center is done. Insert a toothpick into the center of the loaf; it should come out with minimal moist crumbs, not wet batter.

Remove from the oven and cool before cutting.
Top with powder sugar if desired.

The end result is a moist banana bread with a slightly caramelized coffee cake topping.
