French's Crispy Onion Chicken

This is what I call a "grocery store helper" meal. Back in the day, we used to read the recipes found on the back of packaged foods, and one of my all-time favorites is this French's Crispy Fried Onion Chicken. Now that I am older, I like to use this chicken for a basic Cobb salad. It gives just the right amount of crunch with very little effort and fewer calories than traditional fried chicken.
Let's get to it...

INGREDIENTS
2 tablespoons all-purpose flour
1 1/2 pounds boneless skinless chicken breast cutlets (about 4)
1 egg
salt, pepper & paprika to taste (optional as this isn't in the original recipe)
INSTRUCTIONS
Preheat oven to 350°F. Place Mix Crispy Fried Onions, flour and seasoning in a shallow dish or pie plate. Lightly crush onions with hands or with a rolling pin.
Beat egg in separate shallow dish. Dip chicken into egg; then coat with onion crumbs on both sides, pressing firmly to adhere. Place chicken on a lined baking pan and spray with cooking spray.
Bake 20 to 25 minutes or until golden brown and cooked through (internal temp. should reach 165°F).
That's it! You can serve this as is with your favorite side dishes, or you can add it to a simple Cobb salad as pictured above.

Pretty basic stuff and super easy for any day of the week.
