Protein (Boxed) Pancakes

If you're a boxed pancake mix fan, this recipe is with you in mind. You can use whatever pancake mix you have in the pantry or you can substitute with Protein or Gluten-Free alternatives.


The only added benefit in using brands like Kodiak Cakes is more protein, less carbs. You can get a small box at most grocery stores for the price of the jumbo Costco size of Krusteaz mix. The 72 oz box of Kodiak at Costco is about double the price and doesn't last as long.


To maximize protein we're using Silk Ultra and eggs. One cup of this protein based almond milk contains 20 grams of protein! If you can't find it, prep one cup of almond milk with a scoop of vanilla protein powder in a shaker bottle.




 

INGREDIENTS:


1 cup Pancake mix

1 cup Silk Ultra

2 eggs

1 tsp vanilla extract

*Butter or cooking spray for griddle

*Dash of cinnamon optional



PREP:


Preheat griddle pan on medium heat.


In a large mixing bowl, combine pancake mix, almond milk, eggs and vanilla. Mix well with a whisk. If you like cinnamon, add a dash for added flavor.


Spray griddle pan, (or melt butter) pour batter to desired size/shape. I pour about a 1/4 cup of batter for one pancake. Cook, until bubbles appear on the surface of the pancakes, and the undersides are golden brown. About 2 minutes each side.
